I primarily focus on nutrition and quality ingredients in all my baking, and especially my breads. My sourdough breads are long bulk fermented and cold fermented to get the best possible digestive benefits and flavor out of the breads. I only use unbleached, NOT bromated or enriched flours, organic ingredients when possible and my inclusions are fresh.
